These Chocolate Gummies are created using heavy cream, gelatin, cocoa powder, maple syrup, speedy decaf espresso (optional), sea salt and vanilla flavorings. While adding additional speedy decaf to enhance chocolate flavors is optional, I advise giving it a try as I believe this adds depth of chocolate flavor!
Pour the liquid mixture into an 8×8 pan that has been greased with cooking oil or use a candy mould. Since you will place the finished product into the fridge to chill before refrigerating it, I prefer silicone moulds; if not using one square pan could work just as effectively.

Coconut milk can also be used in making chocolate gummies, although you should bear in mind they could take on an overly strong coconut flavour when used alone as opposed to mixed with other beverages like Native Forest’s coconut beverage.

Instructions
In a medium saucepan, mix cream with gelatin until bloomed (this should take 5 minutes). Combine cocoa powder, maple syrup, instant coffee powder and salt in another pan over low heat; whisk constantly to dissolve all parts and dissolve gelatin completely before taking saucepan off stove to remove from medium-low heat and add vanilla before pouring through an incredible mesh sieve to cool for 20 minutes before pouring mixture into molds or an 8×8 baking dish to chill for 5 hours in refrigerator before refrigerating to serve cold.
